Every slightest nuance is important to us. We clearly differentiate between tart, bitter, sour, dry, salty, hot and sweet. In short, seasoning is our vocation, shared by everybody involved in the process – our partners, our testers and of course all of us at Gourmerie.

Our current product range is just the beginning, a first, essential step. We will expand – continuously and in all sorts of taste directions. There is still so much to discover and try out in terms of spices, herbs, salts and aromas.

Our vocation has led us to trade in unusual and exquisite spices to refine recipes and meals. They are true taste enhancers. Most of our products are from Indochina and barely known here in Europe.

We, Gourmerie, are changing that right now – together with our gourmets and restaurateurs.

Whether mountain pepper or wild ginger – every product undergoes comprehensive and thorough quality testing at the local production site. We also control every single delivery before shipping the product to Germany. Here we carry out food testing of all imported goods at the Pieldner Institute in Stuttgart. Only then are our products released for consumption an sale. Because we ourselves are our most demanding customers.

Pepper – what is pepper really? Definitely not the greyish powder that can still be found in some restaurants, even today. Pepper is so much more – a multi-layered taste experience: a touch of lemon, a sprinkling of fruit and of course a serving of heat.

Mak-Kenn mountain pepper

Our Mak-Kenn mountain is dried in a particularly gentle way, handpicked and thoroughly cleaned of particles and seeds. Because only in its purest form can this precious pepper fully develop its characteristic flavour: fresh and slightly citrusy with a mild heat.

Mak-Kenn Oil

The French perfume designer Lauren Severac discovered Mak-Kenn years ago for the perfume industry. He was intrigued by the peppery citrus scent. The highly concentrated oil has been produced by Laurent Séverac exclusively for us – Gourmerie. He extracts it via steam distillation of the freshly harvested “fruits” of the mountain pepper directly on site. A single drop can refine a jus, a marinade or vinaigrette.

Phu-Quoc Pepper

Red Phu-Quoc pepper grows on the island of the same name in the South of Vietnam. This very rare variety is only harvested when the berries are ripe and a deep red. Like all of our pepper varieties we handpick and carefully dry the berries. Our Phu-Quoc will captivate your taste buds with its unusual fruitiness, strength & tobacco flavors.

Clausena Indica (botanical name) -also known as wampi- is part of the citrus family and grows best in the mountain regions of Vietnam. We dry the seeds of its oval, light yellow berries carefully in special, temperature-controlled rooms. Their taste will remind you of nutmeg and cloves paired with a slight fruity sourness. In the kitchen wampi combines very well with pork.

Special Curry

Our homemade “Hanoi Old Quarter” curry is produced exclusively for Gourmerie by Laurent Séverac in Hanoi. The intensive smell of star anise, cinnamon, coriander, pepper, turmeric and vanilla will transport you to the streets of Hanoi. We recommend using our special curry mixture for marinades, Asian dishes, steaks, dessert sauces and, in the winter, to enhance a warming mulled wine.

We dry our wild ginger – like our pepper varieties – in shady rooms: a gentle method that protect their aroma. The ginger therefore maintains its intensively fruity and pleasantly hot taste that has even won over star chef Pierre Gagnaire.

These seeds of a rare magnolia tree are collected in mountain villages in North Vietnam and then dried. Its exceptional taste unfolds at its finest when it is freshly ground and it can be used to refine, for example, foi gras, beef tartar or game dishes.
